For a cake pan of approx. 30 cm, lined with
baking paper
Ingredients
120 g butter, soft
200 g cane sugar
½ teaspoon ground bourbon vanilla
5 baby bananas (ripe), mashed
2 eggs, beaten
1 ½ dl milk
200 g white flour
50 g almonds, coarsely chopped
1 tsp baking powder
1 tsp baking soda
½ tsp salt
2 baby bananas, cut in half lengthwise
Preparation
Banana mixture: put butter in a bowl, add sugar and vanilla, stir with the whisk of a mixer until the mixture is lighter in color. Stir in bananas, eggs and milk.
Dough: Mix flour and all ingredients up to and including salt, then mix into mixture. Pour batter into the pan prepared with baking parchment, spread bananas on top of batter.
Bake: Approx. 55 min. in the middle of the oven preheated to 160 degrees. Take out, cool slightly. Remove bread from pan, cool on wire rack.
Tip: Stir 50 g dark chocolate, coarsely chopped, into the dough with the almonds.
